Lentil Stuffed Samosas - Dal ke Samose

Samosas make me extremely nostalgic. Not a potato filled ones but rather lentils and meat stuffed samosa which are a known delicacy of the little town I come from. Growing up, any feast or occasion had to include samosa. Mom starts her morning by making pastry from whole wheat flour which is similar to making roti. Two balls of dough are put together pressed at edges and then rolled out thinly. While its cooked on the griddle, the air fills and separates the two layer of pastry that were put together leading to two thin sheets of round pastry.

Then, she makes the filling, slowly cooking the meat or lentils, chopping herbs, onions and eye balling the perfect amount of salt and other spices. We sisters along with mom would sit on a long cloth which is like a table cloth only that its put on the ground instead of on the table in the dining room. Mom watches her daily soaps while her hands as if trained to make samosas worked perfectly in making the samosa pockets and filling them. While she watched and chatted, we sisters would stuff ourselves with the rolled samosa and mom would lightly hit our hands to keep us off. She said it messes up her count. We never listened.

Once more than 100 samosas were rolled up, she would get ready for deep frying them. We would follow her in the kitchen and eat the samosas as they came out of the oil, perfectly crisp, hot and golden. She would ward off us again, complaining how nothing will be left for the guests. We (and the major part of ‘we’ is me) never listened.

And trust me, this are so pathetically moreish, you just won't realize how you eat a dozen. We always had guests asking for second and third servings. And somehow mom had mastered the art of always making enough so guest left satisfied.

Fast forward to mom's dear daughter aka me, as much as I love them, I can't always find time to make everything from scratch. So I rely on frozen spring roll wraps as pastry which works wonderfully well here. My mom won't be very proud but M is. Which works at the moment.

If you are thinking this is going to be difficult, let me tell you, the hands in the step by step tutorial are M's. All these samosas in the picture are rolled by M. I just  had to show him once how to roll them and then he was on his own! I don't know what that says about him (he's more capable in kitchen then I think?) but trust me, if he can make them, you surely can!

    I just showed these to my dad, and he got sooo excited because these are the same type of samosas we make in our house (except we use chana dal instead of toor dal). Both he and my mom are from Surat, which has a large Bohra community. My dad is from a community, that while Hindu, makes food rather similar to the food made in the Bohra community. When I saw post, I had to show him and we both had a little moment of happiness seeing this dish on your blog. Anyway, thanks for featuring this recipe, you made both of us smile a good deal today!

  8. Oh wow, you just made me nostalgic Kulsum! I have similar stories related with samosas :-) Although my mom never made them with soaked toor daal. She does make soaked chana daal stuffed parathas so I can imagine how scrumptious these daal filled samosas must be. Goes right to my MUST try list!

  15. Before I was able to visit your site this morning, I went back to bed. I had samosa dreams, I kid you not. It's mainly how to roll them. Usually I dream about bacon, but I guess there's still always a surprise.

  21. Your post makes me want to fry up some rightaway! These look great..Arhar dal is totally new for me in a samosa..I usually use urad or moong...but mostly its a potato filling.Wow..you have done a really neat work with those wrappers..every time I use it , I end by burning :)

    Thank you everyone. I didn't imagine samosa was so loved :-) Readers have left comment about using urad dal, moong dal or chana dal, so basically you can use any lentil you fancy. I bet it is as delicious!

  26. Yeah ,samosas. i remember how painstakingly mom would roll out the 'pars',make the filling and then fill those wonderful triangles. She usually allowed me to help her but soon shoo me out when i didn't wrap the triangles tighter and neater like she did. SO, yeah, i never got around to making the little traingles well enough. So when i crave samosas these days i make them punjabi style with tur dal filling or mince filling .I take care to roll the pastry as thin as possible. They taste good but the paper thin parwala samosa is unbeatable.

  28. They look fantastic. I love samosas, but i've never had it with a lentil filling. I have never made them myself because i am very afraid of deep frying (i once started a fire and never tried it again).

  40. When I want to treat myself, I buy myself a lentil samosa at the farmers market here - they're brilliant. Spicy, flavorful, healthy(ish). I almost fell off the bed when I saw your post - it's just one of those things I never thought about making for myself...until now!

  57. Beautiful photos. I can't wait to try to make these! I traveled to India in the spring of 2010, and I loved when my homestay mom would make samosas from scratch on Sunday mornings. Now, I just buy them frozen at the Indian store, but this recipe seems muuuuch better.

  67. Samosas make me nostalgic too, for the Indian restaurant in my college student union. I ate there almost every day because the food was so delicious and the lines were short. I always felt so smug knowing I got better food faster than those people waiting for Burger King.
